Piedmont's sparkling wines are exceptional and part of the history of sparkling wine in all of Italy. In fact, did you know that Italian spumante was born in Piedmont?

Not all sparkling wine in Italy is Prosecco! In fact, Prosecco is produced in Veneto and Friuli Venezia Giulia while Italian Spumante has its origins right here in Piedmont.

Sparkling wines are made with twi different methods in Piedmont: Charmat or Martinotti method, and champenoise or Metodo Classico.

To produce bubbles, both methods undergo two stages of fermentation, but it is the second stage that makes the difference between the two.

Charmat or Martinotti Method: With this style, the wine undergoes a secondary fermentation in stainless steel autoclaves and is bottled under pressure. This takes less time than the Classic Method.

Champenoise or Classic Method: Also known as the "traditional method", this requires the secondary fermentation to take place in the bottle. This means it needs more space to store it for a longer period of time: during fermentation, aging after fermentation on the lees, and aging for at least another year.

The most famous sparkling wines of Piedmont are Moscato D'Asti and Asti Spumante.
